Vanilla & Almond Granola

Make a batch of this on a Sunday afternoon and you've got breakfast for the week ahead all ready to go!
2 cups rolled oats
3/4 cup steel cut oats
1/4 cup oat bran
3/4 cup flaked almonds
1/4 cup hemp seeds
2 tbsp coconut sugar
1 tbsp vanilla extract
1/4 cup coconut oil
1/3 cup maple syrup
1/2 tsp cinnamon
Preheat the oven to 160c, and get two large baking trays out ready.
Measure out all of the dry ingredients and mix together well.
Melt the coconut oil and stir in the rest of the wet ingredients until combined.
Pour the wet over the dry and mix well until all of the oats are covered in the oily syrup.
Spread out over the two baking trays and bake in the oven for 20 minutes.
You will need to keep your eye on these, and keep mixing it over the tray every 5 minutes to stop the bits at the edges getting too crispy or burnt
Once all evenly golden, remove from the oven and leave to cool completely on the trays.
Once cooled place in an airtight container ready for breakfasts (or snacks).
