Almond Pulp Cookies

What's the best part of making deliciously fresh mylk at home?
You can use your leftover pulp to make tasty cookies!


  • 1 cup of almond pulp
  • 1 cup of medjool dates
  • 1 large egg
  • ½ cup almond butter or peanut butter
  • ¼ cup of honey or agave syrup
  • ½ cup chocolate chips
  • ½ tsp sea salt
*Place the almond pulp in the fridge overnight to remove the excess moisture



  1. Preheat the oven to 350 and prepare your cookie sheets with baking mats 
  2. Place the dates in your Vitamix & process for 5 minutes or until they've formed a paste
  3. Add all remaining ingredients besides the chocolate chips and process until a dough forms
  4. Mix in the chocolate chips using a spatula
  5. Scoop out your mix and use a large spoon or cookie scoop to form rounded dough balls - place on cookie sheet
  6. Gently push each ball down to form a disc shape
  7. Bake for 15-17 minutes or until the cookies begin to brown
  8. Leave to cool on a wire rack - Enjoy
