Zambri's Italian Series: The Italian Meal - from Antipasti To Zabaglione (Victoria) 11/04
Take your Italian cooking to the next level with Chef Peter Zambri. With this class we will examine the idea behind an Italian meal, from Antipasti To Zabaglione (and everything in between.)
We start with antipasti and some variations on what it takes to create a great Antipasto Platter for your guests, including mixed cured meat and cheese platter with accompanying vegetables. We will also create two types of home made crostini.
We move on to the Primo course of the evening, and discuss Risotto and Pasta. We will determine why one may be better than the other, on any given night and create a
Primo Plate that everyone will love, Pasta Cecci.
This section of the meal will bring fourth a Braised meat dish in the Italian way, Brasato al Vino.
We will learn about Piccolo Pastaceria and make puff pastry cornetti with pastry cream. We will also talk about Italian sweet wines.
