Adventure into Northern Thailand with Chef Calvin Pipping.  These salty, spicy, sweet, and savory dishes will enliven your palette.  If you cannot make the trip to Chang Mai, this class is the next best bet!


Nahm Prik NumChang Mai style chili relish dip served with a variety of raw and blanched vegetables (cucumbers, cabbage, long beans) and pork rinds

Khao Soi Gai Northern-style chicken curry noodle

Geng Hang Lae – Northern-style spiced Burmese pork curry spiced like cassia bark, coriander, anise, and cumin served with steamed jasmine rice 

Kluay Kaegthai style fried bananas

Chef Calvin Pipping

Calvin Pipping was born, and spent most of his childhood in Singapore before immigrating to Vancouver and calling this his home for the last 20 years. He is a graduate of the Pacific Institute of Culinary Arts and has worked his way up to sous chef under notable Vancouver Chef Alex Tung.
