Join Chef Jonathan Chovancek has he takes you through a three week, 9 hour intensive cooks training to make you a better home cook. We will a broad range of kitchen skills and techniques from knife skills to fermentation to curing your own bacon! All classes will culminate in a delicious meal based on the demonstrations. This is a demonstration series with many hands on elements.

You must register for all 3 classes.

Week 1  - January 14th

Join Chef Jonathan in the first of three classes to whip you into shape in the kitchen. Chef will take you through the fundamental cuts in global cuisine, how to use your knife and basic food safety. You will also learn how to prepare vegetable and meat stocks and turn them into delicious soups - the building blocks of flavour in the kitchen. We will also cover basic fermentation with wild yeasts, emulsified sauces and becoming organized in the kitchen.

MENU:

  • Chicken minestrone with umami egg drop dumplings
  • Wild yeast red fife sourdough pizza with preserved tomatoes
  • Black pepper & pecorino
  • Caesar salad with salted anchovy croutons

Week 2 - January 21st

In part 2 of our 3 part series we continue building your kitchen skills and delve into different cooking methods.

We will make and cover the following techniques and recipes:

-bacon dry cure, pea meal, wet brine cure

-braised chicken ballottine

-chicken butchery

-béchamel sauce variations

-hollandaise sauce and variations

-Parisian gnocchi

-egg custards

MENU:

  • Smoked aged cheddar Parisian gnocchi mac & cheese gratin
  • Chorizo spiced & brined chicken ballottine with saffron hollandaise, sweet peppers, green olives & capers
  • Grand Mariner, star anise & espresso crème brûlée

Week 3 - January 28th

Following up on Bootcamp 2 we will enjoy the fruits of our labour as Chef Jonathan demonstrates how to quickly cure and roast local fish, prepare vibrant condiments, hard sauces & vinaigrette's and do some basic pastry work to showcase the season.

MENU:

  • Herb salt cured wild salmon with lemon aioli
  • Peameal bacon with house-made smoky tomato ketchup
  • Spice cured bacon with bourbon BBQ sauce
  • Autumn Farmer’s market salad with confit tomato & bacon vinaigrette
  • Autumn fruit pies with tonka bean Chantilly cream
