Basque Strawberry & Ginger Beer Mimosa
Start your weekend off right, get some friends round for brunch and treat yourselves to a delicious brunch cocktail!
1 cup strawberries
1 tsp espelette chilies
1 tsp pink peppercorns
3 leaves basil
2 thin slices lemon
4 dashes Bittered Sling orange & juniper bitters
1 L ginger beer
Orange slices and strawberries for garnish
Muddle the strawberries with the spice, lemon and basil.
Add the bitters and ginger beer and allow to stand for 24 hours in the refrigerator.
Strain and pour over ice 3/4 up the glasses.
Garnish the glasses with slices of strawberries, orange and small basil leaves.
Top with sparkling water.
