The Mystery of the Mozza Knot
A magical moment was captured during one of Linda Michaluk's cheese-making classes this past fall. While Linda and chef Mara Jernigan were demonstrating how easy it is to make fresh cheeses such as ricotta and mozzarella at home... Mara broke out the Mozza Knot. You can also see how it's done in Italy but Mara's way is much, much easier to follow.
Not only does home made cheese taste better, it can be used to create all kinds of dishes impossible with store-bought cheese. All you need are a few simple ingredients (buttermilk, whole milk and salt), a pot, clean stainless steel spoon, thermometer and a little patience. And Mara? She's currently living in Belize cooking with the local ingredients - learning all kinds of new tricks - in her new home at Belcampo Lodge.
